Moroccan Chickpea Vegetable Tagine

Afterward, you must put everything in the ceramic tagine and put it into the oven till it bakes in 45 minutes and the vegetables become tender. Those who cannot find a tagine can use an oven friendly dish.  Normally, you will need nothing more than one large sweet potato, cauliflower and zucchini, but you can also add your favorite vegetables to create a unique taste.

Spring Asparagus, Pea, Zucchini Soup with Pesto

First of all, sauté the garlic and onion and add all the ingredients into a pot.  Make sure that you add asparagus, zucchini, and peas to the sautéed vegetables. Lastly, add the vegetable broth and coconut milk to enhance the smoothness and texture.

On the other side, take a food processor and put all the pesto ingredients without any oil. Then blend them all with a little water to get the required consistency. Enjoy the dish with a loaf of crusty bread to enjoy a unique taste like never before.
