Easy Gluten-Free Macaroni and Cheese

The kid certified recipe is an amazing dish for everyone irrespective of their age.  You will need 1/4 cup butter, 3/4 teaspoon mustard powder, 10 ounces gluten-free elbow pasta, 1 1/4 teaspoons salt, 4 cups shredded Cheddar cheese, 4 cups milk and 1/4 cup cornstarch.

For toppings, you will have to buy 2 gluten-free bread slices, toasted and broken into crumbs (optional), 1/2 teaspoon paprika (optional) and 1 teaspoon butter, softened (optional).

To start with, you will have to preheat the oven to 190 degrees C or 375 degrees F and arrange a 9×13-inch baking dish. Take a large pot of water and add salt to it then cook elbow macaroni in the boiling water. Make sure that the macaroni does not become too tender or remains hard. Thus, keep an eight-minute limit as the standard for the boiling process.

On the other side, take a saucepan and melt the 1/4 cup butter over medium heat. Subsequently, add mustard powder and salt into the melted butter but do not overheat. Whisk cornstarch and milk together until the mixture becomes smooth and add the butter mixture to blend it afterward.

Switch on the stove and use a saucepan for cooking the milk mixture over medium heat up to the thickening of the sauce.  It will only take about five minutes.  Add Cheddar cheese to the sauce and wait for it to melt. Finally, put in pasta to the cheese sauce and stir well.

Mix 3 cups Cheddar cheese into sauce till the heat from sauce melt the cheese. Next is add pasta to cheese sauce and stir; pour into the prepared baking dish. Mix the remaining cup of Cheddar cheese, one teaspoon butter, gluten-free bread crumbs and paprika to use sprinkles it over the dish. Bake the finished product for 30 minutes to get the ever-charming crunchy taste.

Cauliflower Pizza Crust

This recipe will surely delight a person who has never eaten a typical pizza. However, like wine, the acquired taste will force you to cook this gluten-free dish anyway.

You will need 1/2 cup water, 1 head cauliflower, cored and separated into florets, 1/2 teaspoon salt, 2 ounces fresh goat cheese, 1 large egg, 1/2 ounce finely grated Parmigiano-Reggiano cheese, and 1 pinch cayenne pepper, or to taste.

In the first place, preheat the oven to 200 degrees C or 400 degrees F and cover a baking sheet with parchment paper. Now, blend the cauliflower using a food processor until it becomes fine.  Then, take water, ground cauliflower and salt in a skillet and cook it over medium heat until the water completely evaporates. The entire process will be over in five to six minutes of heating, and you should leave the preparation to cool down on its own.

Take a clean dish towel and transfer the mashed cauliflower in its center. Then wrap the towel and squeeze with all your force to eliminate the excessive moisture. Thereafter, you will be left with 1 1/2 cups of cauliflower pulp.

To prepare the soft dough, you must stir goat cheese, egg, cauliflower, Parmigiano- Reggiano cheese and cayenne pepper in a bowl. Place the dough ball in the middle of the baking sheet and press it about 1/4-inch thick into the circle.  Now, bake the dish till it becomes golden brown in about 40 minutes. Let it cool down and turn the crust for toppings.

Gluten-Free Oatmeal Waffles

To prepare this alternative dish for oatmeal bowls you will need 1 1/2 cups gluten-free rolled oats, 1 egg at room temperature (separated), cooking spray, 3/4 cup almond milk, 1 tablespoon brown sugar, 1 teaspoon baking powder, and 3 tablespoons melted butter.

Preheat waffle iron and grease it with a cooking spray. Then take a bowl to mix almond milk and oats together. Now, put in the egg yolk and butter into the mashed oats and whisk it to provide thickness in the mixture. Take the egg white and beat it in a glass till stiff peaks form.  Now add baking powder and brown sugar in the mixture and fold beaten egg white in the batter. Lastly, scoop 1/2 cup batter in the preheated iron and cook for about 5 minutes or up to the end of iron’s steaming.
